How it works

Our first run of Dexter beef was at the end of July 2022 and the feedback was incredible. Since then we’ve slowly been increasing our outputs and fine tuning our operation so that it complements our busy family life!

There will be eight batches of beef per year so this really is a limited, top class product.  Although there is the demand to produce larger volumes of beef we prefer to limit production and work on constantly striving for the ultimate in flavour and tenderness while optimising our sustainability.

We book an animal in for slaughter and then start to accept pre-orders for our boxes. You pay a 50% deposit to secure your order and pay the balance on collection/delivery. Once the beef has been matured and is ready for butchering, we can assess what quantity of each cut we will have and then we will confirm orders and arrange delivery.

Ideally, you will receive your beef within 48hrs of butchering- giving us enough time to check, weigh, pack, label and return to chill. That way you can decide what you want to try fresh and what you want to pop in the freezer. As a guide, a full taster box would take up half a standard freezer drawer and a premium box would fill a drawer but most people will want to try those steaks fresh, not that they are in any way impaired by freezing but trust us- you’ll not be able to wait!

We are a business focused on sustainability and so we use food grade compostable packaging and plant based labels unless otherwise requested. This packaging is suitable for fridge and freezer use and will breakdown safely in your home compost or your brown bin. We use medical/food grade insulated boxes and ice packs to transport our beef to ensure food safety.

Due to the limited nature of our beef we only accept direct orders so that we can manage quantity- once we have an animal butchered and fulfilled our pre-orders we will contact our VIP list and advise of any extra availability.

We encourage nose to tail consumption so if there are any extras you want e.g. stock bones, organs, tongue, tail etc just let us know and we will enquire with our butcher.

Due to limited availability, it is not possible to guarantee the weight of each individual item in advance but every effort will be made to ensure the minimum overall box weights. We also rely on the expertise of our butcher to get the best cuts from each individual animal so we so don't specify in advance what each box will contain though all will contain roast, steaks, steak burgers, lean steak mince and stewing beef. You might wonder why a 10 kg box is not just double to price of a 5 kg box- that's because every cut of beef has a different price per kilo and the 10 kg box contains more prime cuts.

If you want to try smaller quantities of beef you can pick up individual fresh or frozen portions e.g. 1kg mince, diced beef, roasts, burger packs and pairs of steaks at our monthly pop up at Monaghan Farmers Market, Church Sq, Monaghan town. The market runs every Friday from 10am-2pm and you can follow our social media pages to check our pop up dates.
